I "thought" I created this recipe YEARS ago. Turns out, I'm not the only one who came up with this recipe; there are umpteen versions online.
I've made STO with several different versions of polish sausage. You know the horseshoe shaped rings in the vacuum sealed packages at the grocery store? Those. I have a favorite, while this is in no way an advertisement, this is the best flavored one for us; the Hillshire Farm Beef Smoked Sausage. I'm sure there are many other types of sausages that would work in this as well!
This is another one-dish style meal. The method on it is simple but it is not a throw it all in the pan at once type of thing. Start the skillet heating on medium heat and add in some butter. Let that melt and add in the taters. Cook the potatoes until the edges start to turn translucent. Add in the onions and cook those until they turn translucent but not limp. Add in the sausage and cook til the sausage is browned and veggies are done. Sometimes the sausage doesn't have enough fat and the mixture seems dry, you can add a little dash here and there of olive oil. Season to your taste with salt and pepper.
I like to serve this with cottage cheese and canned peas. For some reason the flavor combination of the 3 is tasty to me.
