We've had about every type of weather you can get in a week's time. There were even tornados Northwest of us. It's been a cold dreary drizzly day and while I wanted to fix a quick supper, I also wanted something filling. Handsome has been working in the cold all day too. Time for a tummy filling meal.
I've seen variations of this recipe all over online, bookface, tickety tock.... Chicken & Stuffing Bake. I had a bag of boneless skinless chicken breasts to get used up. This is what I've come up with. The original recipe was for a crockpot meal and to feed 5 people; I don't have that kind of time tonight. I changed this over to an oven recipe. I have a casserole dish that is a rectangle shape but amounts to about half of a 9x13 pan. I didn't want the stuffing to just be a little bit for each chicken breast, it needed to be considered a side dish. The chicken breasts are huge so only 3 fit into the pan. I smeared the cream of chicken soup over the chicken with a squishy. Then I spread the stuffing mix over that and into the corners of the pan. Foil was the lid of choice for this and into a cold oven it went. Then I turned the oven to 350 so everything can heat up together. Mashed potatoes and corn for the rest of the sides and this should be a belly buster.
