Six Dinners Under $50.00

Presenting the newest member of my One Butt Kitchen:

My birthday was last week and my wonderful boss (no I'm not kissing up) gave me a gift card to Macy's.  I went on their website and found they had this Cuisinart 7 cup food processor on sale.  I got there just in time because I got the LAST ONE! I'm so happy.  I've been wanting one of these forever, but just never got around to getting myself one.  I can't wait to CHOP things!

What a long day today was. I knew I had to stop at the grocery store after work and the thought just exhausted me even more.  Funny enough, Trader Joe's has a way of energizing me.  Once there, I thought I'd see how many dinners I could get for the hubby and me at a budget of $50.00.  Turns out, the answer is six!  I wanted to share, especially for some of my friends back in my hometown of Omaha, who recently just got a Trader Joe's.  I've had a few of them ask me what's good.  Well, here you go!

First up, linguine with pesto and we'll have steamed broccoli to go with it.  Light, simple meal.

Next? Marinated grilled eggplant and zucchini paired with chicken cooked in a Masala Simmer Sauce and served over Jasmine rice.  The chicken will be divided up into two dinners - we'll probably bbq the other half.

Steak and potatoes for my "meat & potatoes" hubby.  The steak was a bit of an indulgence, but you gotta have that once in awhile.

Pork cutlets along with artichokes.  Just exactly what I'll do with these two items, I have yet to figure out.  

And for the night we're feeling lazy - Trader Joe's Orange Chicken -  this is one of our favorites there.
