On my quest to get the hubby and me eating better, I made up a big batch of breakfast burritos. They consisted of a carton of Egg Beaters, a box of Morningstar Sausage links and some shredded, light Mexican blend cheese. These are really easy. Just scramble up the eggs, microwave the links per the instructions on the box, crumble up the sausages and mix it all together adding a bit of cheese. I wrapped the filling in tortillas and bagged the burritos up two per bag. All we have to do is zap one in the microwave for a couple of minutes and we have a yummy, low-fat breakfast. Hubby said he couldn't even tell the sausage was vegetarian!
In keeping up with the burrito theme, I've also been making up some "wraps" for us to take on our lunches. Take a tortilla and spread some light cream cheese on it. Then layer some lettuce, tomato and, for the hubby, I used cooked chicken breast and a small slice of provolone:
Wrap it all up, place in a zip-lock bag and throw a little treat in - hubby's got a great lunch!
So why did I title this post PLT's? Because that's what I made for myself. I had eaten chicken breast for a couple of days in a row, so when I started assembling the wrap for my lunch, it dawned on me I had prosciutto in the fridge from a recipe I made a few days ago...I left off the cheese and voila - a PLT!
So yummy - I only used a couple of slices of prosciutto because I didn't want it to overpower the veggies. This ended up so good, I think I'm going to have a repeat for lunch tomorrow!
And because I like a little sweet after lunch as well, I packed a mini Cadbury Egg in my lunch. Seriously. How cute are these? I love Cadbury Eggs, but avoid them due to the calories. Mini ones I can justify if I only have one.
