It's a Mom Thing....

Sunday, April 3, 2011

About a week ago, my mom IM'd me to let me know she had pictures of the favorite recipe she cooks for my dad.  She said the pictures were for my blog.  I thanked her and told her to send the recipe.  ;)  Not sure how enthused she was about that little suggestion...but today, I got an email.  It included the recipe and pictures AND other pictures to torture me with.

Marinated Sea Bass With Corn

Marinade:
  2 Tbsp fresh lime juice
  1 Tbsp EVOO
  1/4 tsp sea salt
  4 green onions, thinly sliced
  1/2 tsp cumin

  4 portions sea bass

Combine marinade ingredients.  Marinate sea bass in plastic zip lock bag in marinade for 1-2 hours.

Drain sea bass, set aside.  Discard marinade.  Heat 1 tbsp EVOO in skillet over medium high heat.  Cook sea bass on each side approximately 4-5 minutes.  Season with salt and pepper.  Remove from pan and hold in warm oven.  Deglaze the pan with a splash of white wine.

  In pan combine:
  8 green onions, thinly sliced
2 cups fresh or frozen organic corn
  1/2 tsp cumin
  1 tbsp lime juice

Cook over medium high heat until corn is heated through, about 3-4 minutes.  Add one chopped, seeded roma tomato and 2 tbsp chopped fresh cilantro.  Season with salt and pepper.

Serve with crusty french bread and a glass of your favorite white wine.

  Bon Appetit!

Also sent you a couple of pictures of peppercorn-encrusted ribeye roast.  That recipe is in Epicurious.com under prime rib au poivre.  Quite yummy!  Also lemon meringue pie I just made today.  Your dad had a craving...

She killed me with the pie...the only pie I love (aside from French Silk, which she does amazingly well, too.)

Why did I move out?  Someone remind me?  ;)

PS: - The Pampered Chef roasting pan she uses is AMAZING. My parents got us one for Christmas a few years ago and I don't know what I'd do without it...you can find it here:
