Mountain Potato Cakes

I found this recipe this weekend in a cookbook one of my grandmother's gave me called "Smokehouse Ham, Spoon Bread & Scuppernong Wine: The Folklore and Art of Southern Appalachian Cooking."  My Grandma Mary lives in the Smokey Mountains and sent this to me a few years ago.  It is a real TREASURE. Truly authentic recipes (with some even calling for squirrel).  If you're curious, check it out here:


Mountain Potato Cakes

2 eggs
4 cups cold mashed potatoes
1 finely chopped onion
1/4 cup flour
8 tablespoons butter

Beat the eggs & mix thoroughly into the mashed potatoes along with the onion & flour.  Form into biscuit-sized patties about 1 inch think.  Spread butter on each side of the patty and fry at medium temperature until golden brown on each side.


Now, my mashed potatoes were a bit to creamy, so I ended up melting a bit of butter into a fry pan and dropping the patties into it which worked quite well.

These look good. I've never had much luck making potato patties. They always seem to fall apart on me!
