BBQ Pork & Roasted Potatoes

This has been a long week. Heck, it's been a long year and we've only begun the third month!  That said, my inclination towards cooking has been the KISS method: Keep It Simple, Stupid!

I had yet another amazing shopping trip to Trader Joe's this week.  I spent $50.00 on four dinners and several lunches for the hubby. I even managed to pick up a few things to send my parents (who are Trader Joe's-less).

The other night I paired BBQ pork chops with roasted potatoes and the results were quite yummy.

I made sure to get the thin chops:


And then poured about four big spoonfuls of the BBQ sauce I had left over from last week's chicken dinner.  I let them sit in the sauce for about 20 minutes:


While those were getting delish, the hubby got the potatoes prepped (I do need my Zuma Blitz time on Facebook, you know).  He cut up the teeny tiny potatoes (yes, that's what they are really called!) a bit too small, but everything worked out in the end.  He then drizzled them with a bit of olive oil and seasoned them with Italian seasoning.  Here they are pre-oven:


Mmmmmmm.  Pop those bad boys in a 375 degree oven for about 30 minutes and flip them halfway through.

Next, I put just a tiny bit of olive oil in a fry pan and heated it up.  I really love how thin pork chops cook so quickly.  Let them sautee for about 3-4 minutes on each side:


When they were done, they looked like this:


Man, I'm hungry already and the hubby just had the last of them for leftovers.  Grrrrr.  The potatoes were so crispy on the outside and just yummy fluff on the inside.  I could eat these all the time!

*drooling* That looks soo good. I'm sitting here trying to think of what to pick up for dinner. We live with my mom, and she isn't a fan of meat. She used to like chicken, and then we got cute, fuzzy chicks. Now I'm totally perplexed when it comes to planning menus. :o/

Btw, are those fingerlings? I used some of TJ's fingerlings last night for a slow-cooker meal. They are the closest thing to new potatoes in taste. Yum!

They are actually called Trader Joe's Teeny Tiny potatoes. They are a bit smaller than fingerlings (although they could be, I'm sure) They come in a yellow netting. I never would have known about them if it weren't for the TJ's cookbook I got a few months ago.

Last night I dreamed that I got 8 million points on Zuma Blitz! LOL That was really a dream! I'm Trader Joe's-less, too and I miss it! Love those little potatoes and the thin chops. Looks yummy!
