Stopping at Trader Joe's for groceries, I picked up a pack of chicken breasts and, lo & behold, they had zucchini! Grabbed a pack of it as well as a package of mini heirloom tomatoes. Really, how yummy do these look?
Hubby sliced up the zucchini (three total) and we added three cloves of chopped garlic. Yummmmm.
I heated up a few tablespoons of olive oil in a pan and sauteed the zucchini & garlic combo with a few sprinkles of Italian seasoning. When the zucchini was a bit golden and pretty much done, I threw in the tomatoes. Here's what we ended up with:
I really like trying "non-mainstream" BBQ sauces, so I picked this one up, Everett and Jones, not knowing anything about it. I have to admit I was a bit worried when I saw "Bay Area's Finest." Ummm, I love San Francisco and all, but not sure how well known they are for BBQ:
It was SO good! Really thick and dark. They have a great website and I'm thinking hubby and I will need to go pay them a visit next time we take a trip to the Bay. I poured a few spoonfuls over the chicken breasts and let them rest for about 20 minutes Then we covered them with foil and baked them for about 50 minutes in the oven.
The chicken was so tender and we drizzled some extra BBQ sauce (which had a nice kick) on it. Added some fresh grated Parmesan cheese to the veggies.
While we ate, I dreamed of summer. :)
